Strawberry Shortbread Biscuits

Simple and Easy

Strawberry Shortbread Biscuits Recipe, just the name conjures up delicious biscuits, which they are and they go down very well when friends and family drop in for morning or afternoon tea.

This recipe comes from my cousin Lee and she tells me that this recipe has been a staple recipe of hers over the years.

You can serve them on their own, they are great for school lunches or you can serve them as a dessert or even after dinner with tea or coffee.

Ingredients for base

3/4 cup plain flour
1/4 cup self raising flour
2 tablespoons sugar
90 grams softened butter
1 egg lightly beaten
1/2 cup strawberry jam

Ingredients for topping

1 egg
2 tablespoons sugar
1 1/4 cups coconut

Preparation

Base: Line slice / biscuit tray with baking paper.

Combine the plain flour, self raising flour and sugar together then rub in the butter using your fingers. When well combined add the lightly beaten egg.

Press the mixture into the prepared slice tin. Then spread the mixture evenly with the strawberry jam, after which add the topping.

Topping: Lightly beat the egg and sugar together until creamy then mix in the coconut.

Bake in moderate oven 25 to 30 minutes or until golden brown.

If you serve these biscuits as a dessert you could serve them with cream, ice cream or even hot or cold custard, adding fresh strawberries as well. Delicious which ever way you want to serve them.

HINT: Instead of strawberry jam you could use another type of fruit jam or you could also use the varieties of fruit conserves available today in your local supermarket or specialty store. Or maybe like Lee you make your own jam and conserves.
