Strawberry Palmiers

Strawberry Palmiers are delightful French pastries that are layered with a vanilla-flavored cream and fresh strawberries.

They are very easy and simple to make, having only five ingredients.

Ingredients

375 grams packet puff pastry
300 ml carton of cream
1 teaspoon vanilla
1 punnet of strawberries
caster sugar

Preparation

Dust board lightly with caster sugar. Roll out pastry into rectangle approximately 15cm x 25cm. Sprinkle lightly with caster sugar.

Fold the long sides of the pastry in, so that they meet edge to edge in the centre. Bring folds over again so that there are now four layers of pastry.

Using sharp knife, cut pastry into 1cm pieces. Brush one side with water, sprinkle with caster sugar. Put on a prepared oven tray, lined with baking paper, sugar side up. Allow room for spreading. Spread them open at folded ends to make small V.

Refrigerate for 10 minutes.

Bake in hot oven for 7 to 8 minutes, turn over. Bake for a further 7 to 8 minutes until crisp and golden.

Allow to cool. Whip cream with vanilla and then spread cream mixture over half a biscuit then arrange sliced strawberries over cream and biscuit. Top with another biscuit.

Pipe or spoon cream over finished biscuit. Decorate each with a strawberry. You can brush them with warm jam and/or sieve icing sugar over them.

HINT: Although better eaten on the day of making, you can make these biscuits a day ahead of when needed, keeping them in an airtight container and then completing them with the cream and strawberries.

There will not be any left overs!
