Sticky Date Pudding Recipe

You will find Sticky Date Pudding Recipe on lots of restaurant menus. It has become very popular and is very easy to make.

This is another of my friend Dorothy's recipes, that she makes regularly and her family love.

Preparation

1 1/4 cups seeded dried dates
1 1/4 cups boiling water
1 teaspoon bicarbonate of soda
50 grams chopped butter
1/2 cup brown sugar, firmly packed
2 eggs, lightly beaten
1 cup self raising flour

Method

Grease 20cm round cake tin

Combine dates and water, stir in bicarbonate of soda. Let stand for 5 minutes.

Blend or process date mixture with butter and sugar until pureed. Add eggs and flour, blend or process until just combined. Pour mixture into prepared cake tin.

Bake uncovered in moderate oven about 1 hour (cover with foil if pudding starts to over cook on top).

Stand 10 minutes, turn onto serving plate.

Serve warm with Butterscotch Sauce or Toffee Sauce

Then just add cream and / or ice cream and maybe some strawberries.
