Lemon Delicious

Lemon Delicious is a creamy lemon custard pudding that will keep them coming back for more dessert every time.

This recipe for Lemon Delicious is from my friend Cynthia.

Ingredients

1 tablespoon butter
3/4 cup sugar
3 tablespoons plain flour
2 eggs separated
1 lemon
rind of lemon
1 cup of milk

Method

Beat butter and sugar together until creamy, then add the plain flour, beaten egg yolks, lemon juice, lemon rind and then the milk.

Beat egg whites on high till peaks form and then fold into mixture.

It is important that the ingredients be added in this order.

Put in high sided ovenproof dish, stand in a pan of water and bake in moderate oven for 20 minutes.
