Hello and welcome to my blog. Today is the 26 January 2012 and every Australian knows, no matter where they are in the world, that today is Australia Day. I have been meaning to actually write in my blog for quite a while now, but the time never seemed to be just right, that is until today and the date seemed appropriate.

I live in Sydney Australia, a most beautiful part of the world. I have had a lovely day, spending it with my youngest daughter Stephanie, her husband Chris (well really it's Christopher, but he prefers Chris)and their gorgeous 18 month old son Alexander. Of course Alexander is gorgeous because, like all grandparents know, their grandchildren are always gorgeous.

Chris is originally from England and loves our lifestyle here and just loves to barbeque, so today (if you live in Sydney you will know that the weather here has not been particularly kind lately, more like cruel really, it just keeps raining and raining) amazingly the sun shone for a while and Chris cooked a barbeque for lunch. Very nice. Perfect really. Having lunch cooked (and a really nice lunch it was too) for you and spending time with loved ones.

Stephanie cooked an apple pie for dessert, the recipe of which I just have to share with you. Too easy!

Ingredients

1 kilogram of apples
2 tablespoons of brown sugar
1/2 teaspoon of cinnamon
2 sheets of shortcrust pastry

Method

Peel and slice apples, then mix with sugar and cinnamon. Line the bottom of a pie dish with one of the sheets of thawed pastry. Place uncooked apple mixture onto uncooked pastry. Then place other pastry sheet on top, piece with fork. Brush with milk and place into preheated 150 degree oven for 40 minutes.

Hints

Keep a check on the time the pie is in the oven, as the pastry can cook faster than the apples and you want them both cooked at the same time.

Stephanie likes the colour the apples go when she uses brown sugar, but you could use any sort of sugar you like.

She used Granny Smith apples in todays recipe, but has used other varieties at times and found them all to be okay in the recipe.

You could use other sorts of pastry if you wish.

I had my pie with yoghurt and Chris and Stephanie had ice-cream. It would taste good with cream or custard as well.

I took a photo of the finished pie, but unfortunately I don't know how to load it on this page. I have some reading up to do!
