Ginger Nut Biscuits Recipe


This yummy recipe for Ginger Nut Biscuits, also known as Ginger Cookies is another of my mother-in-law Joy's recipes. She has been making this one for years and it is one of her staple stand-bye biscuit recipes.

Ingredients

1 cup of sugar
115 grams of butter
1 egg, slightly beaten
2 cups of self raising flour
2 teaspoons of golden syrup
1/2 teaspoon of bicarbonate of soda
6 teaspoons of ground ginger

Method

Preheat oven to 180 degrees celsius.

Sift together dry ingredients. Place butter, sugar and golden syrup in saucepan, melt over low heat. Remove from heat, cool slightly then add beaten egg. Add sifted dry ingedients, mix well.

Refrigerate for 15 minutes.

Roll into small dobs (Joy's words). Place onto greased oven tray and bake for 10 to 15 minutes.

Allow to cool, or (if like me) enjoy them straight from the oven.
