Cream Cheese Pie

I have just found this cream cheese pie recipe that is another of my mother in law Joy's recipes. Like all of her recipes it tastes delicious and is easy to make.

CRUST

Ingredients

450 grams of Nice biscuit *
225 grams of softened butter

Method

Combine the above ingredients, reserving some crumbs for the top of the filling, then press mixture into a pie plate lined with foil.

FILLING

Ingredients

680 grams cream cheese **
1 packet lemon jelly
1 cup caster sugar
3/4 cup boiling water
375 mls carnation evaporated milk **
Juice of a lemon
Grated rind of a lemon
1/2 teaspoon vanilla essence

Method

Dissolve jelly in the boiling water and add the rind and lemon juice, set aside and keep warm

Cream the cream cheese and caster sugar together, mixing well, then add the vanilla and the jelly mixture

Whip the evaporated milk until frothy and then add the creamed cheese mixture, combine well

Pour into prepared crust and sprinkle on the reserved crumb crust and chill.

Serve with strawberries and fresh cream or ice cream.

This is a really good recipe when you are having family or friends over for a meal as you can make it ahead and keep it in the refrigerator until you are ready to use it.

It means you can spend more time with your family and friends, enjoying their company.

* Nice biscuits are an Australian biscuit, you could use a plain sweet biscuit instead.

** You could use the low fat products that are available today.
