Butterfly Cupcakes
My grand-daughter Arabella is waiting for Butterfly Cupcakes to finish baking.
Children and adults alike, love these very pretty cakes. You can see from the photo opposite how nice they look. I made these with the help of my grandchildren in my daughter's kitchen.
They are very easy and simple to make using my cupcake recipe batter.Make

batter, (see recipe below). These cakes are my two daughters' all time favourite cakes and now my grand-children, one girl and three boys love them as well! Ingredients 125 grams of butter 1/2 cup of caster sugar (super fine sugar) 2 eggs 1/2 cup of milk 1/2 teaspoon of vanilla 2 cups of self raising flour
Method Cream the butter and sugar together until light and fluffy, add vanilla and lightly beaten eggs, mix well. Fold in sifted flour and milk alternately, mix well. Put dessertspoons of mixture into cupcake pans or patty pans. Bake in moderate oven 10 to 15 minutes. Allow to cool before cutting a slice from the top of the cakes, cut this slice in half to form two wings. Spoon whipped cream or your favourite topping across the top of the cakes and put the wings into position on each cake. Top with sifted icing sugar. These cakes can be enjoyed at numerous events. They are great sellers at school fetes and fairs and, as I have already mentioned, are particularly enjoyed by children. They are easy and simple cakes to make and are always a great hit at children's birthday parties! Hint: You can use light butter and milk for this recipe. It makes no difference to the texture, taste or enjoyment!
